This 'recipe' is for roasting a turkey in foil 8-10lb (3.6-4.5kg) where the initial 30 min roast is done at gas Mk7 and turned down to gas Mk3 for three hours with a final roast for 30 minutes at gas Mk6 with the foil peeled back. For other sizes you will have to make adjustments as neccessary. It is vitally important that foul of any kind is well cooked. To test, insert a skewer into the thickest part of the thigh (the turkey's!) and the juices should run clear if it's cooked. If you need to adjust the time for a larger/smaller bird, click the show times from now/after button (red arrow) so that you can see how long times are from the origin, press and hold down the shift key while you drag the 4th timer (that's the par boil parsnips one) watching the third timer from the end time from origin time. Don't forget to subtract the 20mins oven warm up time. All ovens vary, make absolutely sure yours is working at the temperature it's supposed to be. I strongly recommend using an oven thermometer for this. If you're in any doubt as to whether or not this is neccessary, my oven which is fairly new can be as much as 50f/10C under temperature at certain times of the day when gas pressures are low.
